Spring: Prepare for the Season
After winter, inspect and prepare your outdoor kitchen for the active outdoor entertaining season ahead:
Grill Inspection and Cleaning
- Burner tube inspection: Remove the cooking grates and heat deflectors and inspect the burner tubes for rust holes, spider nests (a common issue in Oklahoma), and deterioration. Spider webs in burner ports cause flare-ups and uneven heating — clean with a wire brush or compressed air.
- Deep grill cleaning: Spring is the time for a full grill cleaning — remove grease from the bottom of the grill box, clean the vaporizer bars, and clean the cooking grates with a grill brush and warm soapy water (if stainless) or seasoning oil (if cast iron)

- Inspect granite countertops for any hairline cracks that may have developed from winter freeze-thaw cycles
- Re-seal granite countertops that show signs of water absorption (pour a small amount of water — if it beads up, the sealer is intact; if it absorbs quickly, re-seal)
- Quartzite countertops require similar sealing attention if unsealed granite-style sealers are used
Refrigerator and Appliance Check
- Turn on outdoor refrigerators and verify cooling performance before loading with food
- Clean refrigerator coils if accessible — dust and debris on coils reduces efficiency, particularly important for outdoor units working in Oklahoma’s summer heat
- Test the outdoor ice maker’s water connection and run a test cycle
Summer: Active Season Maintenance
During peak use, regular attention keeps the outdoor kitchen performing well:
- Post-cookout grill cleaning: A quick brush of the cooking grates while still warm after each use prevents grease buildup that creates flare-ups over time
- Grease management: Empty the grease trap or grease collection drawer after every 3 to 5 cooks. Overflowing grease creates fire risk and pest attraction.
- Stainless steel care: Wipe stainless steel surfaces with a dedicated stainless cleaner or warm soapy water and a soft cloth in the direction of the grain. Avoid abrasive pads that scratch stainless and create surfaces that attract rust.
- Countertop care: Wipe countertops after each use. For granite, avoid leaving acidic foods (lemon juice, vinegar, tomato sauce) on the surface for extended periods.
- Outdoor refrigerator performance: During Oklahoma’s hottest weeks (July-August), outdoor refrigerators work harder than rated capacity. Ensure ventilation openings around the unit are clear. Keep doors closed when not in use to reduce compressor load.
Fall: Pre-Winter Preparation
Oklahoma winters are generally mild, but hard freeze events require proactive preparation:
- Plumbing winterization: Before the first hard freeze forecast, close the shutoff valves in the outdoor kitchen cabinet that isolate the water supply to the outdoor sink and ice maker. Disconnect hoses. Open the faucet briefly to drain any standing water in the supply line.
- Ice maker winterization: Run the ice maker’s drain cycle, disconnect the water supply, and follow the manufacturer’s specific winterization steps to drain the water system inside the unit.
- Grill deep clean: Fall is a good second deep clean of the grill before reduced winter use. Remove burner tubes, clean the interior thoroughly, and inspect for components that need replacement before next spring.
- Cover the grill: A quality stainless steel grill cover protects the grill from winter precipitation and debris. Ensure the grill is fully cool before covering — never cover a hot grill.
Year-Round: Structural Inspection
- Inspect stucco or stone veneer exterior annually for cracks, particularly at corners and joints. Caulk any cracks before water infiltration causes damage.
- Inspect access door hinges and latches for rust or seized movement. Apply a marine-grade lubricant or stainless steel-safe oil annually.
- Check countertop overhangs for any movement or cracking — a countertop that has shifted from its substrate may need re-securing.
