Oklahoma summers are long and hot, and an outdoor kitchen that’s used regularly from May through October needs attention to keep performing well. A simple maintenance routine catches small issues before they become expensive problems and keeps every component — from the grill to the countertop — in good condition through heavy use season.
Monthly Maintenance: During Active Season
Grill Cleaning
The grill is the hardest-working appliance in the outdoor kitchen and needs the most consistent attention. After every cook, brush the grates while still hot. Once a month during heavy use, do a thorough cleaning: remove the grates, clean the burner tubes (clear ports with a wire brush or toothpick — blocked ports cause uneven heat), clean the grease catch tray, and wipe down the interior with a grill-safe cleaner.
In Oklahoma’s summer heat, grease in catch trays can become a fire hazard if not cleared regularly. Check and empty the grease tray every 3–4 cooks during peak summer use.
Stainless Steel Care
Oklahoma’s combination of heat, humidity, and occasional high winds carrying dust creates challenging conditions for stainless surfaces. Wipe down all stainless exteriors monthly with a stainless cleaner and microfiber cloth, always wiping with the grain. Fingerprints and grease oxidize on stainless in Oklahoma sun faster than in cooler climates. A thin coat of stainless steel polish applied after cleaning slows future buildup.
Refrigerator Coils and Door Seals
Outdoor refrigerators work harder in Oklahoma summers than any indoor appliance — ambient temperatures can reach 100°F+, forcing the compressor to run nearly continuously. Clean the condenser coils monthly (typically accessible from the back or bottom depending on the unit). Check door gaskets for cracks or gaps — a compromised seal causes the unit to run constantly and can lead to compressor failure in Oklahoma heat.
Seasonal Maintenance: Start of Season and End of Season
Start of Season (April–May)
- Inspect gas connections for corrosion or loose fittings — use soapy water to check for leaks at all connection points
- Check burner tubes for wasp or mud dauber nests — Oklahoma’s spring pest activity frequently results in blocked burner ports
- Inspect countertop sealers — if water no longer beads on sealed concrete or granite, reseal before heavy summer use
- Check pergola structure for winter damage — inspect post bases, beam connections, and any hardware for rust or movement
- Test all electrical outlets and lighting fixtures after winter
End of Season (October–November)
- Deep clean the grill and coat grates with high-temperature cooking oil before storage
- Drain and shut off any outdoor water supply lines before freeze risk
- Cover the grill with a quality fitted cover — Oklahoma winters, while moderate, have freeze events that accelerate oxidation on exposed stainless
- Check access door hinges and latches for corrosion — lubricate with a silicone-based lubricant rated for outdoor use

Don’t DIY gas fitting inspections — the stakes are too high.
